pepperoni pizza.
Serves 4
2 tbs olive oil
2 garlic cloves, thinly sliced
1 cup (250ml)tomato passata
1 tbs sun-dried tomato pesto
3 fresh oregano sprigs, leaves picked
4 x 26cm store-bought pizza bases
2 x 125g balls fresh mozzarella, torn
100g thinly sliced pepperoni or chorizo Basil leaves and shaved parmesan, to serve

Preheat the oven to 250°C and place 2 pizza stones or baking trays in the oven. Heat oil in a frypan over medium heat, then cook garlic for 30 seconds, stirring. Add passata, pesto and oregano leaves, then season. Simmer, stirring, for 10 minutes or until reduced, then set aside. Spread each base with 2 tbs of sauce,then dot with mozzarella and pepperoni. Transfer pizzas to the preheated baking stones and bake for 10-12 minutes until the bases are crisp. Scatter with basil leaves and parmesan, then serve.
