vermicelli with green curry prawns 
Serves 4

250g rice vermicelli noodles
2 tbs peanut oil
1 red onion, thinly sliced
2 garlic cloves, finely chopped
1 tsp grated ginger
1-2 tbs green curry paste, depending on how hot you like it
1/2 tsp ground turmeric
1 1/2 cups (375ml)chicken stock
1 cup ( 250ml ) coconut milk
2 tsp brown sugar
500g green prawns, peeled,deveined, tails intact Steamed broccolini and lime wedges, to serve

Prepare noodles according to packet instructions. Heat oil in wok over medium high heat. Add onion, garlic, ginger, curry paste and turmeric. Stir-fry for 1-2 minutes. Add stock, coconut milk and sugari Bring to a sim men Add prawns, then cook over medium heat tor 5 minutes. Serve with noodles, greens and lime.
